What “Seasonal” Really Means to Us
Written By Lu
Seasonality is not a marketing term here. It’s a constraint — and a gift.
When asparagus arrives in early spring, it stays on the menu only as long as it deserves to. When tomatoes peak in late summer, they take center stage — not because they’re trendy, but because they’re ready.
Working seasonally forces creativity. It asks the kitchen to adapt, rethink, and rebuild. A dish you loved last month may not return exactly the same. That’s intentional.
We believe dining should feel tied to time. When you taste something here, it belongs to this moment — and only this moment.
